Pâte à Choux
Ingredients
Method- 60g Milk
 - 6g Water
 - 1g Salt
 - 1.5g Granulated Sugar
 - 56g Butter
 - 58g Flour
 - 10g deZaan Rich Terracotta Cocoa Powder
 - 112g Eggs
 - Pearl Sugar (for garnishing)
 - Cocoa Nibs (for garnishing)
 
- Bring to a boil the milk, water, salt, sugar, and butter.
 - Sift together the flour and deZaan Rich Terracotta cocoa powder.
 - Add to a pot with wet ingredients and mix until combined.
 - Cook to a dry, dough-like texture.
 - Transfer to a mixing bowl. Mix at low speed using the paddle attachment.
 - Add eggs gradually, checking the texture to be shiny and forming a V once the paddle is picked up from the dough.
 - Pipe 1.5 cm rounds (tip #6).
 - Sprinkle pearl sugar and cocoa nibs over the top.
 - Bake at 160ºC/320ºF for 11 minutes (ventilation to 50-75%).
