Ingredients
  • 500g Milk
  • 120g Buttermilk
  • 100g Light Brown Sugar
  • 150g Flour
  • 150g Whole Wheat Flour
  • 45 deZaan True Gold Cocoa Powder
  • 10g Baking Soda
  • 90g Oats
  • 40g Sunflower Seeds
  • 40g Pumpkin Seeds
  • 160g Dried Cherries
  • 70g Cocoa Bibs
  • 2g Ground Turmeric
  • 2.5 Ground Cinnamon
  • 1.25g Freshly Grated Nutmeg
  • 5g Salt
  • 1g Freshly Ground Black Pepper
  • 0.6g Fresh Thyme Leaves
Method
  1. Preheat the oven to 180°C/350°F. Line a 30 x 7.5 cm loaf pan with parchment paper.
  2. Combine all the ingredients in a bowl and mix until well combined.
  3. Transfer to the prepared loaf pan. Bake for 30 to 35 minutes. Remove from the oven and let cool completely. Reduce the oven temperature to 165°C/325°F.
  4. Remove the loaf from the pan and slice into crackers of the desired thickness.
  5. Arrange the crackers on a parchment-lined sheet tray and bake for about 15 minutes, until dried throughout.
