Terra Rossa Chocolate Syrup

A versatile chocolate syrup for milk, cocktails and coffees

Part 1: Chocolate Syrup
Ingredients
  • 35g Cocoa Powder - Terra Rossa
  • 50g Caster Sugar
  • 3g (1 tsp) Liquid Glucose
  • 150ml Water
Method
  1. In a saucepan, add 100ml of the water, sugar and liquid glucose. Stir to incorporate ingredients.
  2. Heat to 110ºC (on a medium heat) being careful not to create a caramel.
  3. Take off the heat, and add the cocoa powder and 50ml of water and stir thoroughly.
  4. Add mixture back to the heat. Bring back to a boil stirring continuously to create a smooth paste.
  5. Remove from the heat and pour into a heat-proof container. Allow to cool before use.
  6. To make chocolate milk: add 10ml of chocolate syrup to 200ml of milk.

Ingredients
  • 2 tbsp of chocolate milk syrup
  • 200ml whole milk
Method
  1. Place 2 tbsp of chocolate milk syrup into a glass, top up with 200ml of whole milk, stirring to create a smooth chocolate milk drink.
