  • 40g Telur
  • 61g Puree Markisa
  • 38ml Susu Cair
  • 20g Krim
  • 83g Gula Pasir
  • 79g Tepung
  • 30g deZaan Deep Russet
  • 3g Bubuk Pengembang (Baking Powder)
Cara Buat
  1. Untuk adonan cake, diamkan semua bahan cair ke suhu 21C
  2. Dengan memakai blender, emulsikan mentega dengan telur, dan campurkan puree markisa
  3. Perlahan, masukkan gula dan krim sambil menjaga emulsi tetap konsisten di blender
  4. Ayak semua bahan kering, dan aduk ke emulsi sebelumnya sampai merata, dan diamkan agar adonan terbentuk sempurna

Part 2: UNTUK ISI CAKE
Bahan
  • 40g Puree Markisa
  • 40g Heavy Cream
  • 54g Gula Pasir
  • 32g deZaan Deep Russet
  • 32ml Minyak Kelapa tak berbau (deodorized coconut oil)
  • 1g Ekstrak Vanila
Cara Buat
  1. Untuk membuat isian cake, campurkan semua bahan ke dalam kuali, dan panaskan hingga 65C-70C dan berbaur hingga merata
  2. Sisihkan dan diamkan di suhu ruangan hingga konsisten
Part 3: PENYAJIAN
Cara Buat
  1. Untuk menyelesaikan lava cake, iris isian yang sudah terbentuk ke dalam bentuk kubus, sekitar 15-18g masing-masing.
  2. Pompakan 60g adonan cake ke cetakan silikon dan tekan masuk isian sebelumnya ke dalam adonan cake; pastikan isian semuanya masuk di dalam.
  3. Panggang dalam oven di suhu 160 Celcius, tanpa kipas, selama 14 menit.
