Mocha Oat Cookie
  • 275g Butter (room temperature)
  • 110g Light Brown Sugar
  • 10g Instant Coffee
  • 50g Egg
  • 10g Vanilla Paste
  • 180g Flour
  • 110g Oat Flour
  • 32g deZaan True Gold or deZaan Terra Rossa Cocoa Powder
  • 9g Baking Soda
  • 4g Baking Powder
  1. Preheat the oven to 180°C/350°F.
  2. Cream the butter, brown sugar, and instant coffee.
  3. Mix in the egg and vanilla until smooth.
  4. Add the flour, oat flour, cocoa powder, baking soda, and baking powder and mix until combined.
  5. Roll the dough out. Cut into desired shape and size.
  6. Bake for 8 to 10 minutes.
