  • 750g Tepung Roti
  • 750g Tepung AP
  • 75g Crimson Red Kakao Bubuk
  • 1000g Susu
  • 150g Gula
  • 50 gram garam
  • Ragi Instan 32g
  • 170g Mentega Lembut
  • 350g Poolish Starter
  • 1000g Beurre au Taurage
Cara Buat
  1. Campur semua bahan selain beurre au taurage, dalam spiral mixer, 4 menit kecepatan satu, 2 menit kecepatan dua.
  2. Laminasi dengan beurre au taurage menggunakan lipatan tiga huruf, lalu bekukan semalaman.
  3. Keesokan harinya, biarkan adonan mencair di lemari es, lalu lembaran dengan ketebalan yang diinginkan. Bentuk adonan, lalu biarkan proofing selama sekitar 1,5 - 2 jam, atau hingga mengembang dua kali lipat.
  4. Olesi dengan kocokan telur, lalu panggang pada suhu 180°C/ 350°F/, kipas angin 2, selama 17 menit, atau hingga matang sepenuhnya. Biarkan nampan dingin, taburi dengan Crimson Red sebelum disajikan.
