Part 1: Karamel Berbumbu Emas Asli
Bahan
  • 500 gram Santan Kelapa
  • 2g kapulaga
  • 3g bubuk Jahe
  • 2g Kayu Manis Bubuk
  • 7g deZaan True Gold Bubuk Kakao
  • 300g Gula Pasir
  • 100g Air
Cara Buat
  1. Di dalam panci, didihkan santan dan bumbu hingga mendidih.
  2. Campurkan bubuk kakao deZaan True Gold dengan blender pencelupan. Tetap hangat.
  3. Buat karamel gelap dengan gula dan air.
  4. Masukkan campuran santan sedikit demi sedikit dengan api kecil.
  5. Masak hingga suhu 104ºC/219ºF.
  6. Saring dan simpan di lemari es.
Part 2: Adonan Tart Hazelnut
Bahan
  • 150g Tepung
  • 150g Tepung Kemiri Sangrai
  • 120g Air
  • 60g Lemak Kelapa (dilunakkan)
Cara Buat
  1. Campur semua bahan kering.
  2. Tambahkan air dan lemak kelapa.
  3. Aduk selama 10 menit dengan kecepatan sedang.
  4. Istirahatkan di kulkas minimal 30 menit.
  5. Gulung dan bentuk menjadi cetakan.
  6. Simpan di lemari es sampai siap dipanggang.
Part 3: Isian Pai Labu Emas Sejati
Bahan
  • 400g Haluskan Labu
  • 300g Santan Kelapa
  • 180g Gula Merah Muda
  • 15g Tepung Jagung
  • 3g Garam
  • 7g Kayu Manis Bubuk
  • 5g Jahe Bubuk
  • 10g deZaan True Gold Bubuk Kakao
Cara Buat
  1. Tambahkan semua bahan ke dalam mangkuk atau blender. Blender sampai halus.
  2. Tambahkan ke kulit tart dan panggang pada suhu 150ºC/302ºF sampai matang.
  3. Dinginkan sepenuhnya sebelum mendekorasi.
  4. Akhiri dengan bumbu karamel dan krim kelapa kocok.
