Dezaan Raspberry Crumb Cake HERO CROP
Part 1: Kue Remah Terakota yang Kaya:
Bahan
  • 75g mentega, lembut
  • gula pasir 184g
  • 75 gram telur
  • 10g ekstrak vanila
  • 160 gr tepung terigu serbaguna
  • 43g deZaan Rich Terracotta cocoa powder
  • 5 gram baking powder
  • 2 gram soda kue
  • 2 gram garam
  • 227g krim asam
  • 1 pint raspberry segar
Cara Buat
  1. Dalam stand mixer, kocok mentega dan gula dengan paddle attachment sampai ringan dan mengembang, sekitar 5 menit.
  2. Tambahkan vanili dan telur, sedikit demi sedikit. Gosok di antara setiap penambahan.
  3. Ayak tepung terigu, Rich Terracotta, baking powder, baking soda dan garam.
  4. Tambahkan bahan kering dan krim asam ke dalam mixer secara bergantian dalam tiga kali penambahan.
  5. Tuang ke dalam cetakan yang disemprotkan masing-masing 12 gram dan letakkan setengah raspberry segar di tengahnya. Dorong dengan lembut ke dalam.
  6. Panggang pada suhu 165°C/325°F selama sekitar 8-10 menit.
Part 2: Meringue Kacang Vanila:
Bahan
  • 80 gr putih telur
  • 160 gr gula pasir
  • 8g pasta kacang vanila
Cara Buat
  1. Campurkan bahan dalam mangkuk dan tempatkan di atas double boiler. Kocok terus hingga campuran mencapai 82°C/180 °F.
  2. Tuang campuran ke dalam mangkuk mixer berdiri dan kocok tinggi dengan lampiran pengocok.
  3. Lanjutkan mengocok hingga dingin. Tas dengan ujung bulat.
Part 3: Perakitan:
Bahan
  • Kue Remah Terakota yang Kaya
  • Meringue Kacang Vanila
  • Selai rasberi
  • Raspberry Kering Beku
Cara Buat
  1. Pipihkan meringue di atas kue remah.
  2. Dengan bagian belakang sendok teh, buat lekukan di tengah meringue.
  3. Pipa selai raspberry di tengah meringue.
  4. Bakar ringan meringue.
  5. Hiasi dengan beberapa potong raspberry kering beku.
