Cara Buat- 700ml Susu Utuh
- 41g Trimolin
- Stabilizer 7g 2000
- 109g Gula (kastor)
- 75g Crimson Red Kakao Bubuk
- 65g Quito Oro Cocoa Mass
- Dalam mangkuk tambahkan gula, stabilizer, coklat bubuk dan trimoline. Sisihkan hingga siap digunakan.
- Panaskan susu hingga 45ºC.
- Setelah suhu 45ºC masukkan campuran gula. Aduk rata dengan blender imersi.
- Masak dasar es krim hingga 81-82ºC.
- Tuang dasar es krim di atas massa kakao. Blender dengan imersi blender untuk hasil terbaik.
- Dinginkan dan diamkan semalaman untuk hasil terbaik.
- Sebelum mengaduk, haluskan bahan dasar dengan blender imersi. Aduk ke preferensi.
