Classic Madeleine Batter
Bahan
  • 75g Brown Sugar
  • 15g Madu
  • 135g Mentega
  • ½ Vanilla bean (¼ Vanilla extract)
  • 150g Telur
  • 75g Gula
  • 120g Tepung terigu
  • 20g Terra Rossa Bubuk Kakao
  • 2g Baking Powder
  • ½ orange zest
  • ¼ lemon zest
  • 5g dried Edible flower (Rose, cornflower, dan marigold)
  • 250g Gula halus
  • 30g Air
Cara Buat
  1. Masukkan mentega, madu, vanilla bean, dan brown sugar kedalam sauce pan. Masak hingga mendidih, sampai seluruh bahan larut.
  2. Saring tepung terigu, Terra Rossa , dan baking powder kedalam bowl. Sisihkan hingga siap untuk di digunakan.
  3. Bila mentega dan gula sudah meleleh, matikan api dan diamkan hingga siap untuk digunakan.
  4. Pada saat yang sama, masukkan gula dan telur kedalam mixing bowl. Kocok hingga mengembang.
  5. Bila sudah mengembang (ribbon stage), kocok dengan kecepatan rendah/ sedang dan masukkan bahan kering secara bertahap. Lalu, masukkan lemon zest.
  6. Ketika sudah tercampur, masukkan campuran mentega (masih hangat) secara perlahan. Kocok dengan kecepatan sedang hingga rata.
  7. Masukkan adonan kedalam piping bag. Untuk hasil terbaik, simpan adonan di dalam kulkas semalaman.
  8. Panggang dengan suhu 200 deg C selama 12 - 14 menit (untuk ukuran madeleines reguler).
  9. Ketika sudah dingin, taburkan edible flower diatas madeleine yang sudah dilapis dengan icing tipis.
